Pork with Basil (Pad Krapow Moo)

Thai Translation – Pad = Stir Fried, Kaprow = Holy Basil, Moo = Pork

This dish is a quick and tasty meal that has a spicy earthy flavour in it thanks to the holy basil which is used in the dish. It is a great beginner dish to try and even kids will have fun helping in the kitchen. It has only a few ingredients which are the basis of most Thai dishes.

Cooking Time - 10 minutes
Preparation - 10 minutes

Serves 4

200g minced pork
2 cloves garlic
2 tsp brown sugar or palm sugar
3 tsp fish sauce
1 Tbsp vegetable oil
1 tsp soy sauce
2 – 5 small chilli's
1 cup fresh holy basil leaves

  1. Finely dice the garlic cloves and chilli. Combine the soy sauce, fish sauce and sugar in a small bowl and stir well to dissolve the sugar.
  2. In a wok or non-stick pan, heat the oil til it begins to smoke, add the garlic and chilli and stir fry for 1 minute.
  3. Add the pork mince to the wok and cook well, ensuring all lumps are removed and all the meat has changed colour and beginning to brown.
  4. Add the sauce to the wok and half the basil that has been stripped from the hard stems and washed. Stir well to make sure the basil is thoroughly mixed through with the meat.
  5. Remove from heat, stir in the remaining basil and serve with steamed rice.
