Thai Translation – Moo = Pork, Pad = Stir Fried, Thua Ngok = Mung Beans
Mung bean shoots are a super healthy food and when coupled with lean pork mince make for a filling and healthy meal. Served with steamed rice and a side of nam pla prik, it is perfect for lunch or a quick dinner meal.
Cooking Time – 10 minutes
Preparation Time – 5 minutes
Serves 4
Ingredients
200g pork mince
150g mung bean shoots
2 cloves garlic
½ medium onion
2 tsp fish sauce
1 tsp soy sauce
1 tsp ground white pepper
2 tsp palm sugar or brown sugar
2 tsp vegetable oil
Method
- In a non-stick fry pan or wok, heat the oil over medium heat and dry the finely chopped garlic cloves.
- When the garlic is browned, add the pork mince to the pan and cook well, ensuring all meat has changed colour and the meat has no lumps.
- Add the finely chopped onion, fish sauce, soy sauce, white pepper and palm sugar and mix well to combine. Add the mung bean sprouts, mixing quickly.
- Serve immediately with steamed rice.
