Stir Fried Morning Glory (Pad Pak Boong)




Thai Translation – Pad = Stir fried, Pak Boong = Morning Glory/Water Spinach

Pad Pak Boong is a healthy and flavoursome dish that is made up of only a few ingredients. Morning glory is a delicious green vegetable that is found throughout Asia and when quickly fried with some garlic and chilli makes a great dish on its own or is perfect as a side. I love to eat it for breakfast as its quick, healthy and a perfect way to start the day. Its best cooked and eaten straight away as the morning glory can go a little soft and it changes the flavour.


Cooking Time – 5 minutes
Preparation Time – 5 minutes

Serves 4

Ingredients
1 bunch morning glory, roots removed
4 small red chillis (or to your taste)
3 garlic cloves
1 tsp sugar
2 tsp oyster sauce (substitute with mushroom oyster sauce for vegetarian version)
1 Tbsp vegetable oil

Method
  1. Wash and cut the morning glory into half
  2. Finely dice the garlic and cut the chilli's into pieces.
  3. Heat the oil in a wok over high heat. Add the garlic and chilli and cook for one minute, stirring constantly to ensure it does not burn.
  4. Add the morning glory and cook for 1 minute, stirring well.
  5. Add the sugar and oyster sauce, mix well to combine and remove from heat.
  6. Serve with rice.

  1. I have had this for breakfast this weekend with scrambled eggs and it was fantastic! I love having some veg to start my day off but don't want to spend too long cooking so it was ideal, and very tasty. Thanks so much! x
